Barbecued Memphis Style Chicken Thighs
Ingredients
- 4 chicken thighs
- 4 tablespoons of Double Pepper Memphis Style BBQ Rub
- Disposable aluminum pan
- Hickory or Pecan wood chips
Method
1. Apply the Rub: Coat the chicken thighs with the Double Pepper Memphis Style BBQ Rub and refrigerate overnight.
2. Prepare the smoker: One hour before cooking, soak wood chips in water using the aluminum pan. Prepare the grill by arranging charcoal into two piles on either side of the charcoal tray, leaving space in the centre for the aluminum pan.
3. Set the temperature: Set the BBQ temperature between 150 and 175 degrees celsius. Adjust charcoal or airflow as necessary.
4. Cook the chicken: Place chicken thighs in the centre of the BBQ, directly over the aluminium pan. Cook for approximately 45 minutes, or until the internal temperature reaches 74 degrees celsius.
5. Allow the chicken to rest: Remove chicken from the grill and let it rest for at least five minutes before serving.
6. Serve: Slice the chicken and serve alongside your choice of greens or salad
