Smoky, BBQ flavoured Beef Brisket
Ingredients
- 1.5-2kg Beef Brisket
- 1 tablespoon olive oil
- 3 tablespoons of Warm Smoky Rub
- 2 minced garlic cloves
- 1/2 cup of apple cider vinegar
- 1 1/2 cup of tomato sauce
- 1/2 cup of brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon cayenne pepper (optional addition, if you would like to make it a little bit spicy)
- 2 litres of beef stock
Method
1. Prepare the Brisket: Rub the entire brisket with the Warm Smoky Rub, ensuring it is evenly coated. Let it marinate in the fridge for at least 30 minutes.
2. Create the BBQ marinate: In the slow cooker, combine minced garlic, apple cider vinegar, tomato sauce, brown sugar, Worcestershire sauce, and cayenne pepper (if using). Place the brisket in the marinade, ensuring it is well coated. Let it marinate for two hours.
3. Slow cook the Brisket: Pour the beef stock into the slow cooker with the marinated brisket. Cook on low heat for 8-10 hours, depending on the brisket's weight (8 hours for 1.5kg, 10 hours for 2kg), until the meat is tender and easily pulls apart. Optional: Add a selection of seasonal vegetables alongside the brisket for added flavour.
5. Serve: Slice the brisket thinly against the grain and serve with the remaining BBQ marinade from the slow cooker. Pair the brisket with an assortment of seasonal vegetables or serve it in slider buns with coleslaw.
