Jerk Halloumi Burger
Ingredients
- ¼ red onion, very thinly sliced
- 1 teaspoon of brown sugar
- 1/4 cup Red wine vinegar
- 1 large red capsicum
- 250g halloumi
- 4 brioche burger buns, toasted
- Oil
- 2 tablespoons Jamaican Jerk Beach Spice
- 3 tablespoons mayonnaise
- 12 lettuce leaves (we used butter lettuce leaves)
Method
1. Marinate the Onion: Place thinly sliced red onion in a bowl. Add the brown sugar and red wine vinegar. Set aside for 1/2 hour while preparing the rest of the ingredients.
2. Grill the Pepper: Cut the large red capsicum into long strips. Heat a splash of olive oil in a frypan. Add the peppers and fry until charred and slightly softened.
3. Prepare the Halloumi: Slice the halloumi into 4 wide pieces. Rub each piece with oil and coat evenly with the Jamaican Jerk Beach Spice. Add to the hot frypan and grill until the halloumi is soft and golden.
4. Assemble the Burgers: Spread a dollop of mayonnaise on the toasted brioche bun bases. Layer with fresh lettuce leaves. Top with grilled red capsicum slices and a slice of jerk-seasoned halloumi.
5. Add Marinated Onions: Drain the marinated red onions and sprinkle them over the assembled burgers.
6. Serve: Place the other half of the toasted brioche buns on top of the burgers. Serve with salad or chips.
