History
Jerk cooking has a fascinating historical backdrop, dating back to the 1655 invasion of Jamaica, a time when the Spanish released their African slaves. Seeking refuge, these liberated individuals sought shelter in the Maroon Mountains, where they merged with the indigenous population. Evading Spanish pursuit was paramount, leading to the inception of a distinctive cooking method: preparing meals in subterranean BBQ pits that concealed smoke. The absence of smoke was crucial, preventing their detection and subsequent recapture.
To elevate the flavour of their clandestine BBQs, they concocted a piquant dry spice blend using indigenous ingredients like allspice and scotch bonnet pepper. This blend not only masked their presence but also imbued their dishes with a tantalising kick.
Fast forward to the present day, and the legacy of Jerk cooking endures wherever sizable Caribbean communities reside. Jerk seasoning has evolved into a sophisticated and diverse culinary tradition.
