Creating Bark

What is bark 

Bark refers to the intensely flavourful crust that develops on the exterior of meat during low and slow cooking. This delectable bark is created by a medley of BBQ rub, caramelised sugar, rendered fat and smoke, which interact and undergo a chemical reaction on the meat's surface. As the meat cooks, its natural juices mingle with the BBQ rub, forming a protein network infused with rich flavour that cooks in place, resulting in the characteristic bark.

How do you create it 

1) Cover the entire surface of your meat with a high quality rub such as the Warm Smoky Rub or Double Pepper Memphis Style BBQ Rub.

2) Put the meat on the BBQ and cook it low and slow. 

3) Fill a spray bottle with a savoury liquid of your choice (apple cider vinegar, mustard, balsamic vinegar, Worcestershire sauce) and spray your meat every half hour or hour. This will slow down the cooking process and give the meat more time to build up a lovely bark crust.
