Mediterranean Vegetables
Ingredients
- 3 cups of mixed vegetables (We've used Cauliflower, Spring Onion, Carrot and Zucchini in the picture above)
- 1 Bulls Horn Chilli or small red Capsicum
- 2 tablespoons of Olive Oil
- 2 tablespoons of Balsamic Vinegar
- 2 tablespoons of Ionian Sea Greek Herb Mix or The Fisherman's Co-Op Seafood Spice
Method
1. Prepare the vegetables: Cut the vegetables into 5cm pieces. Preheat the oven to 180 degrees celsius. Place the vegetables in a roasting dish.
2. Coat the vegetables: Whisk the Ionian Sea Greek Herb Mix or The Fisherman's Co-Op Seafood Spice with the Olive Oil and Balsamic Vinegar together in a bowl. Coat the vegetables with the mixture.
3. Roast the vegetables: Roast the vegetables for 45 minutes or until tender.
4. Serve: Serve with a meat dish, Tofu or Halloumi
