Memphis Pulled Pork
Ingredients
- 1 onion, thinly sliced
- 6 cloves garlic, peeled
- 1 ½ cups beef stock
- 1 cup of your favorite barbecue sauce
- ⅓ cup apple cider vinegar
- 2 tablespoons Double Pepper Memphis Style BBQ Rub
- ½ kg pork shoulder roast
- 3 tablespoons water
- 2 tablespoons cornstarch
Method
1. Prepare the pork: Arrange onion slices and garlic cloves at the bottom of your slow cooker. Mix in beef stock, barbecue sauce, apple cider vinegar, and Double Pepper Memphis Style BBQ Rub. Place the pork roast on top.
2. Slow cook the pork: Cover and cook on Low for six to eight hours or until the pork is tender and easily pulls apart. Once done, remove the pork from the slow cooker. Strain the cooking juices. Leave the pork to rest in the slow cooker
3. Prepare the gravy: In a small bowl, whisk together water and cornstarch until smooth. Stir this mixture into the strained juices in the slow cooker. Cook on High for about 15 minutes or until the sauce has thickened to your desired consistency.
4. Serve: Using two forks, shred the pork into bite-sized pieces. Serve on slider buns topped with coleslaw and sliced gherkins for a delicious Memphis-inspired meal.
