Spiced Baked Beans with Chorizo


Ingredients 

  • 1 Onion
  • 300g chopped Chorizo Sausages 
  • 400g Lima or Butter beans 
  • 400g Tomato Passata sauce 
  • 1/2 cup of beef stock 
  • 2 tablespoons Tomato Sauce Infusion
  • 1/2 cup of chopped fresh parsley 

Method 

1. Fry the onion and Chorizo: Add onion and chorizo to a frypan warmed on a high heat. Cook for five minutes until they are browned. 

2. Make the sauce: Pour the Passata Sauce, beans and beef stock into the frypan with the onions and Chorizo. Put the Tomato Sauce Infusion spice onto a square of cheesecoth, tie with kitchen twine and add to the frypan. Bring to a boil and simmer for 8 minutes. 

3. Serve: Stir in parsley and serve with warm buttered toast.
