St Johns Lobster Tails
Ingredients
- 4 lobster tails
- 1 tablespoon Virgin Island Spice Salt or The Fishermans Co-Op Seafood Spice
- ½ cup butter, melted
Method
1. Preheat the oven: Preheat the oven to broil at 260 degrees.
2. Butterfly the lobster tail: Cut down the middle of the back towards the lobster tail with sharp kitchen shears. Flip the tail over and gently separate the middle of the cut shell. Carefully slide your fingers underneath the lobster meat. Flip the lobster back over and gently lift the meat in one piece, ensuring it remains attached at the base of the tail. Once the lobster meat is positioned on top of the shell, close the shell around the base of the meat.
3. Whisk the butter and spices: In a small bowl, whisk together the melted butter and Virgin Island Spice Salt or The Fishermans Co-Op Seafood Spice. Spread this mixture evenly over each piece.
4. Broil the lobster tails: Place the lobster tails in the preheated oven. Broiling times will vary based on the size of the tails. Smaller lobster tails should be cooked for about 7 to 9 minutes, while larger tails over 170g will need about 7 to 10 minutes.
5. Serve: Serve the lobster tails with asparagus, green beans, brussels sprouts and corn.
