Rustic Italian Spaghetti Sauce
Ingredients
- 4 crushed garlic cloves
- 1⁄4 teaspoon of chilli flakes
- 1⁄2 cup chopped onion
- 3 1⁄2 tablespoons olive oil
- 1 140g cans tomato paste
- 1 400g can diced tomatoes
- 1 400g cans crushed tomatoes
- 2 cups of vegetable stock
- 3 tablespoons Spaghetti and Meatball Italian Spice
- 1 capsicum
- 1⁄2 eggplant
- 1 zucchini
- 4 spring onions
- 1⁄4 cup red wine
- 1⁄4 cup parmesan cheese
Method
1. Saute the onion, garlic and chilli: In a large pot over low-medium heat, heat the olive oil and sauté the onions for about 4 minutes. Add the crushed garlic and chilli flakes cook for another 2 minutes.
2. Add the tomato, vegetables and spices: While the pot is still hot add the tomatoes, vegetable stock, Spaghetti and Meatball Italian Spice. Bring the pot to boil, add the capsicum, eggplant, zucchini spring onion and red wine. Simmer on a low heat for 40 minutes
3. Store the sauce: Remove the sauce from heat and transfer it to a container. To thicken, refrigerate overnight.
4. Serve: Serve with Penne and parmesan cheese.
