Blue Swimmer Crab Linguine
Ingredients
- 350g uncooked linguine
- 115g coarsely chopped thick-cut bacon
- 1 finely chopped small sweet onion
- 2 minced garlic cloves
- 1 Jalapeno chilli
- 1/2 cup dry white wine
- 1 cup thickened cream
- 400g blue swimmer crab, coursely chopped into clumps
- 1/4 cup chopped fresh continental parsley
- 2 tablespoons unsalted butter
- 1 tablespoon fresh lemon juice
- 1 teaspoon salt
- 2 tablespoons Fisherman's Co-Op Seafood Spice
Method
1. Cook the Linguine - Cook the linguine. Save 1/4 cup of the cooking water.
2. Cook the Bacon - In a large nonstick pan over medium heat, cook the bacon, stirring frequently, until browned and crisp, about 10 minutes.
3. Prepare the Aromatics - Add the onion, red chile and garlic to the pan, and cook, stirring for 5 minutes or until fragrant.
4. Add the Wine - Pour in the white wine into the pan and stir for 5 minutes or until the liquid is reduced by half
5. Thicken the Sauce - Add the cream and cook for 5 minutes or until slightly thickened
6. Combine Ingredients - Add the reserved cooking water to the cooked pasta. Gentle toss in the butter, lemon juice, salt, parsley and crabmeat. Keep stiring until the crabmeat is heated through and the butter is melted.
8. Serve - Sprinkle Fisherman's Co-Op Seafood Spice over the top and serve immediately.
