History
Tomatoes trace their origins to Peru where tomato sauce was an ancient condiment in Central and South American cooking. The tomatoes journey to Europe began when Spanish Conquistadors introduced them in the mid-1500s. Initially known as "tomatl" in Spanish, this mysterious fruit intrigued Europeans, where they were curiously likened to eggplants. Dubbed "pomidoro" in Italian, meaning "golden fruits" or "golden apple," tomatoes faced skepticism among Italians for centuries, considered too exotic for mainstream acceptance. Thus, their ascent to culinary prominence was a gradual process, marked by skepticism and intrigue.
Tomato sauce made its debut in Italian cuisine within Antonio Latini's cookbook, "Lo scalco alla moderna" (Naples, 1692). Latini, chef to the Spanish viceroy of Naples, features a tomato sauce recipe "in the Spanish style," marking the beginning of tomato-based sauces in Italian cooking. This culinary innovation gained momentum when Italians started incorporating tomato sauce into pasta dishes around 1790, eventually becoming one of the most renowned Italian culinary creations.
Around this time Tomato Sauce started to become a key base. The French recognised the significance of tomato sauce by including "Sauce Tomate" as one of their five mother sauces in classical French cuisine. Meanwhile, in Louisiana, "Sauce Piquante" emerged as a popular foundation for Cajun dishes, elevating the flavours of wild game, seafood, and poultry.
