Fiesta Corn
Ingredients
- 2 ears of fresh corn on the cob
- 1/4 cup of grated colby cheese
- 1/4 cup of diced red bell pepper or bull horn chili (for a spicier kick)
- 1 tablespoon of Warm Smoky Rub (for a mild flavor) or Zesty Taco Sprinkle (for a spicier option)
- Handful of mixed herbs in season (coriander, parsley, dill, mint are all very tasty), roughly chopped
Method
1. Prepare the corn: Peel the husks and silk off the corn ears and place them in a baking dish. Sprinkle the shredded cheddar cheese and diced red bell pepper or bull horn chili evenly over the corn. Season the corn with either Warm Smoky Rub or Zesty Taco Sprinkle.
2. Cook the corn: Preheat the oven to 180 degrees. When the oven is warm, put the corn in it and cook for half an hour.
3. Top the corn: Remove the corn from the oven and sprinkle the chopped mixed herbs over the top.
4. Serve: Serve with with tacos, barbecue chicken and greens.
