Memphis Pitmaster Dry Ribs

1. Prepare the ribs:  Trim off any excess fat and gently pressing two tablespoons of Memphis Style Double Pepper BBQ rub into the meat. Avoid rubbing vigorously, as gentle pressing ensures the seasoning adheres well.

2. Start cooking the ribs: Preheat your smoker and place the ribs bone side down. Close the lid and allow them to smoke for one hour.

3. Apply the spritzer: In a small spray bottle, combine the apple cider vinegar and apple juice. Every half hour after the initial hour of smoking, squirt the ribs with the mixture to keep them moist and flavourful.

4. Finish cooking the the ribs: Continue cooking the ribs for 4.5 to 5 hours, or until the meat develops a beautiful mahogany colour and begins to pull away from the bone.

5. Allow the ribs to rest: Once fully cooked, let the ribs rest for 15 minutes before applying another two tablespoons of Double Pepper Memphis Style BBQ rub for an extra burst of flavour.

6. Serve: Slice the ribs and serve alongside your choice of greens or classic Southern sides such as coleslaw, potato salad, macaroni and cheese, and cornbread.
