Santa Maria Style Beef Tri-tip

Ingredients 

  • 2 garlic cloves
  • 1/2 teaspoon salt
  • 1/2 cup olive oil 
  • 1/2 cup red wine vinegar
  • 3 tablespoons Spicy Pacific Ocean Rub 
  • tri-tip roast, trimmed

 Method 

 1. Make the basting liquid: Crush garlic cloves using a pestle and mortar. Add salt and crush again, pressing the salt into the garlic to form a coarse paste. Transfer the garlic paste to a small bowl, add oil and vinegar and whisk. Cover and refrigerate the marinade for at least 24 hours

 2. Season the tri-tip: Put tri-tips into a large bowl. Evenly coat them with 1/4 cup of the basting liquid, keeping the rest for later. Sprinkle the meat evenly with the Spicy Pacific Ocean Rub

3. Cook the tri-tip: If using a Santa Maria grill, prepare an oak wood fire. If using a normal BBQ, prepare the meat for smoking and put the meat on a grilling rack. Cook the tri top for 15 minutes, basting every five minutes. Turn the tiptop over and cook for 20 minutes, basting every five minutes. 

3. Serve: Remove tri-tips from grill and cover loosely with aluminium foil. Let rest 15 minutes. Thinly slice meat against the grain and serve with tomato salsa and a green salad.
