BBQ Chicken - Santa Maria Style

1. Prepare the basting: In a bowl, combine two tablespoons of Spicy Pacific Ocean Rub with the beer to create the basting sauce

2. Baste the chicken: Generously brush both sides of the chicken thighs with the prepared basting sauce. Preheat your BBQ. Place the chicken thighs on the grill and cook for about 15 minutes,

3. Finish cooking the chicken: Turn the chicken over and start basting continuously. Cook for another 10-20 minutes, basting the entire time. Take off the BBQ when the meat is no longer pink and nice and firm. 

4. Serve: Serve with a healthy french bistro salad (lettuce, mixed summer herbs, pink pickled shallots and a handful of walnuts) and a potato scallop.
