Jamaican Jerk Pork Skewers
Ingredients
- 2 Tablespoons Jamaican Jerk Beach Spice
- 3 spring onions, chopped
- 3 cloves garlic, minced
- 2 scotch bonnet peppers (or substitute with jalapeno for milder heat)
- 1 medium onion, chopped
- Juice of 1 lemon
- 3 teaspoons oil
- 2 teaspoons soy sauce
- 2 teaspoons malt vinegar
- 1 teaspoon minced ginger
- 1.5 kg cubed pork butt (2-inch chunks)
Method
1. Prepare the Marinade: In a food processor, combine spring onions, garlic, peppers, onion, lemon juice, oil, soy sauce, malt vinegar, and ginger. Blend until smooth.
2. Marinate the Pork: Place pork in a glass bowl or large freezer bag. Add the prepared marinade along with the Jamaican Jerk Beach Spice. Ensure pork is coated well. Cover and refrigerate for at least 8 hours, stirring or flipping occasionally.
3. Prepare for Grilling: Remove the marinated pork from the fridge one hour before grilling. Preheat BBQ to medium-high heat.
4. Skewer and Grill: Skewer the marinated pork, placing 4 cubes on each skewer. Grill for six-eight minutes on one side, then flip and grill for another six-eight minutes until pork is cooked through and slightly charred.
5. Serve: Serve the Jamaican Jerk Pork Skewers with a side of green beans, grilled vegetables or a simple cucumber salad.
