How to apply rubs
To apply a dry rub follow these 3 steps
1. Pat the meat dry with paper towels
2. Either gently massage the dry rub directly onto the meat until it adheres to the surface or apply a light coating of oil before generously covering it with the dry rub.
3 Leave the meat to rest at room temperature for 30 minutes to an hour before cooking.
If you are cooking a larger cut like pork shoulder, brisket, or ribs, we suggest first applying a thin layer of mustard or hot sauce onto the meat's surface. This will ensure the rub adheres to the surface and will help keep the meat moist during the cooking process.
